friday happy hour: minty mojito

Since there’s nothing quite like a boozy drink to warm you up at the end of a long work week, I’d like to share a cocktail recipe each Friday for the next month or so. Next up: mojito. Best enjoyed poolside, it’s also delicious with a plate of tacos. Since I have some fresh mint and a bottle of rum on hand, this is what I'd like to make tonight. Serves 1: In tall glass, stir juice from 1 lime and 2 tsp of fine sugar until sugar is completely dissolved. Add plenty of ice cubes or crushed ice. Using a muddler or mortar and pestle, muddle about 1/4 cup fresh mint leaves, and add to glass.  Add 2 oz white rum, and top with soda water. Garnish with more mint sprigs. P.S. More cocktail recipes HERE.
