2013 cookie swap: Sherry's empire cookies
- 3/4 cup Crisco
- 1/4 cup butter
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 2-1/2 cups flour
- 1-1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Raspberry jam
1 Cream together Crisco and butter with sugar. Add eggs separately with vanilla and beat well.
2 Stir in dry ingredients. Smooth into 2 flattened balls and refrigerate at least one hour or to next day.
3 Roll out to 1/4" and cut with 3" rounds.
4 Bake at 350 for 8 - 10 minutes until lightly browned on the bottoms.
5 Let cool. On one half, spread small amount of jam and on the other, spread icing and join together.
