Ingredients
  • 1-1/3 cup unbleached white flour
  • 1-1/3 cup cake and pastry flour
  • 3/4 cup granulated white sugar
  • 3/4 cup icing sugar
  • 1-1/3 cup unsalted butter, at room temperature
  • 1-1/2 cup finely ground hazelnuts {To grind: Use 1/2 cup of the flour along with 2 cups whole hazelnuts and put in blender, pulse until finely ground}
  • 1/4 tsp cinnamon
  • Pinch ground cloves
  • 1/3 cup cocoa powder
Supplies
  • small cookie forms that can be found in specialty stores or online

In electric mixer, cream butter with sugars until smooth. Add flours along with ground nuts, and spices. Mix until dough comes together. It might be a tad crumbly, but if you can make a ball with a small amount of dough then it is just right.

2 Press a tablespoon size ball of dough into a cookie forms. Lay cookie forms filled with dough, filled side up on cookie sheet in a single layer.

3 Bake for 30 minutes at 300 F. Once baked, let cook for a few minutes and tap cookies out of form onto cookie sheet. Serve sprinkled with sifted icing sugar.

Tip: If dough is too crumbly you can add an egg yolk.
