Crispy chicken tacos.

Quick pickle slaw
1 To prepare the quick pickle slaw, place the red and green cabbage, carrot, green onions and cucumbers in a medium bowl. Toss together with the rice vinegar, lime juice, brown sugar and salt; set aside.
2 To prepare the spicy mayo, stir together the mayonnaise and sriracha in a small bowl; set aside.
3 To prepare the crispy chicken, cut each chicken thigh into four pieces of roughly the same size. Place the chicken in a bowl and add the garlic, lime juice, ginger and salt, stirring to combine. Cover with plastic wrap and place in the refrigerator for an hour to let the chicken marinate.
4 Place the flour, egg and panko in three separate shallow bowls. Remove the chicken from the marinade and dredge each piece first in the flour, then in the egg and finally in the panko to cover completely.
5 In a large heavy-bottomed pot, heat 1" of the vegetable oil to 350°F (it’s best to use a thermometer, but the oil is ready when a panko crumb sizzles and toasts in the hot oil). When the oil is at temperature, add the coated pieces of chicken, six at a time, and fry until golden, turning carefully with tongs until all sides are crisp, about 3 to 4 minutes. Ensure that the pieces are cooked through by cutting into one and checking that it is no longer pink inside. Remove the chicken from the oil and place on paper towels to drain while the remaining pieces are cooking.
6 To assemble each taco, pile some of the quick pickle slaw on a tortilla and top with two pieces of crispy chicken. Drizzle with some of the spicy mayo and garnish with a sprig of fresh cilantro.
Prep and cook time: 2 hours

Optional: Lime wedges, sour cream, cilantro sprigs, sliced green onions, sliced jalapenos for garnish.
1 Preheat the oven to 375°F.
2 Heat the olive oil in a large heavy pot over medium heat. Add the garlic and cook for 1 to 2 minutes, until sizzling and fragrant. Add the onion, chilies, chipotle peppers, chili powder, sea salt and cumin.
3 Cook, stirring occasionally, for 20 minutes, until the onions begin to caramelize. Stir in the stock, tomatoes, hominy and black beans, and simmer gently for 30 minutes.
4 Meanwhile, toss the tortilla strips with the vegetable oil on a baking sheet; spread out in a single layer and bake for 12 to 15 minutes, until crispy.
5 Just before serving, stir the salsa verde into the soup. Top bowls with the avocado and garnishes and a handful of the crispy tortilla strips.

1 Chop the chipotle pepper and set aside along with 1 tablespoon of the adobo sauce (reserve the rest of the can for another use).
2 In a small bowl, stir together the paprika and cayenne; set aside.
3 In a large high-sided pan, set the canola oil over medium-high heat. Rub the chicken with the paprika mixture and season both sides with salt and pepper.
4 When the oil is shimmering, add the chicken, flesh side down, in a single layer. Sear until the chicken is golden on the outside, 4 to 5 minutes per side. Transfer to a plate and set aside.
5 Add the onion and oregano leaves to the pan over medium heat and cook until the onion is soft and translucent, about 5 minutes. Add the vinegar and Worcestershire sauce and cook until reduced by half, 1 to 2 minutes. Add the brown sugar, tomatoes, beer, chopped chipotle and adobo sauce and stir to combine.
6 Increase the heat to high and bring the mixture to a boil, then return the chicken to the pan. Cover, reduce the heat to medium-low and braise until the chicken is pulling away from the bone, about 1 hour. Remove the chicken from the pan and set aside.
7 Simmer the braising liquid, uncovered, over medium-high heat until reduced by half, about 10 minutes.
8 Meanwhile, using two forks or tongs, shred the chicken meat into bite-sized pieces, discarding the bones.
9 Return the chicken to the reduced braising liquid and stir to combine. Allow the chicken to cool completely and store in the fridge for up to four days. Alternatively, transfer portions of the chicken to airtight containers and freeze for up to a month. To reheat, place the desired amount with sauce in a medium pot and warm, covered, over medium heat.
10 Serve the guacamole alongside the chicken.
