Recipe: Crispy beet chips

Turn fresh beets into a tasty snack that's both healthy and delicious.

Ingredients

  • 4 large beets
  • 4 cups peanut oil
  • sea salt to taste

Directions

1 Peel the beets and slice into very thin rounds on a mandoline (the thinner the slices, the crispier the chips).

2 Heat the peanut oil to 365°F in a large heavy-bottomed pot. Carefully drop in one-quarter of the sliced beets, stirring gently. Let cook until tender-crisp, about 5 to 6 minutes; remove with a slotted spoon and drain on a baking sheet lined with paper towels.

3 The chips will crisp as they cool. Repeat with the remaining beet slices.

4 Season with salt and serve immediately.

Prep & cook time: 45 minutes
Serves: 4
