Recipe: Donna Hay's chicken and lemon pilaf
- 3 tbsp butter
- 1 sliced red onion
- 1 cup long grain rice
- 2 slices lemon
- 2 cups chicken stock
- 1 cup thawed frozen peas
- 1cup shredded cooked chicken
- 1 cup broccoli
- Finely grated Parmesan to top
1 Melt butter in frying pan over high heat. Add red onion and stir in long-grain rice. Add lemon and chicken stock.
2 Cover with a lid, reduce heat and simmer for 20 minutes or until rice is tender. Stir in peas, chicken, broccoli and grated Parmesan.
