Recipe: Lentil and goat cheese salad

Ingredients
  • 1 can (19 oz/ 540 mL) lentils
  • Halved canned baby beets
  • Crumbled goat cheese
  • Arugula
  • Red wine vinegar and olive oil, to serve


Directions
1 Drain and rinse lentils and place in a bowl with crumbled goat cheese, baby beets, and arugula.

2 Drizzle with red wine vinegar and olive oil to serve.

Serves 2
