Enjoy these healthy fruit and nut granola bars any time of day.
A healthy combination of rolled oats, chopped nuts and dried fruit.
- 2 tbsp ground flaxseed mixed with 4 tbsp warm water
- 1 cup pumpkin purée
- 2 cups rolled oats
- 1 cup chopped nuts
- 1 cup dried fruit (chopped if large fruit, or whole if raisins or berries)
- 1/4 tsp salt (if using unsalted nuts)
1 Preheat the oven to 350°F.
2 Line an 8" x 10" baking pan with parchment paper or spray the pan with oil.
3 Mix all the ingredients together in a large bowl until combined, then scrape the mixture into the baking pan and press in well.
4 Using a sharp knife, score the mixture into 12 pieces.
5 Bake for 20 to 25 minutes, until the edges begin to brown. Serve warm.
Makes 12 bars.
