Recipe: Watermelon and kaffir lime ice pops
Add a refreshing twist to a classic watermelon ice pop with kaffir lime leaves.
- ½ cup granulated sugar
- ½ cup water
- ½ small watermelon, rind removed and flesh cubed
- 1 kaffir lime leaf, very finely chopped
- 2 tbsp freshly squeezed lime juice
1 Boil sugar and water together in a small saucepan for 2 minutes. Remove from heat; allow to cool.
2 Pulse watermelon in a food processor until smooth. Remove 2 cups of the juice and reserve for a later use.
3 Add sugar syrup, chopped lime leaf and juice and process until smooth.
4 Pour into eight popsicle moulds and freeze.
