Cookie swap: Connie's Toblerone shortbread recipe

Okay, truth be told, as much as this is an original recipe, the idea was not mine. I used to get cookies like this from a cafe that was next to the gym I went to. (That's why I work out - for cookies). Anyway, it's simple and easy and everyone loves them. They look pretty dusted with icing sugar too.

Ingredients

  • 2 c. flour
  • 1/2 c. fine sugar
  • 1 c. butter (cold)
  • 1/2 tsp vanilla
  • 5 100 g Toblerone chocolate bars


Directions

Mix flour and sugar in large bowl. Add butter and vanilla and mix until mixture resembles coarse crumbs.

2 Gently knead into a ball and put bowl in the fridge for 1-2 hours.Preheat oven to 325.

3 Roll dough into approx 1 inch balls and place them on ungreased cookie sheet. Break off the Toblerone triangles and press one down into each of the balls.

4 Bake for 10-12 mins Let sit for a minute or 2 then transfer to wire rack to cool.
