Cookie swap: Jennifer's holiday oat cakes recipe

These may not look or sound like the most exciting cookies but they’re delicious. They’re similar to shortbread but with the great taste of oats they’re even better. Try them, you’ll like them. They are more than worthy of being on your holiday cookie tray.

  • ½ cup butter, at room temperature
  • ½ cup shortening
  • ½ cup white sugar
  • 1-½ cups flour
  • ½ tsp baking soda
  • 1-½ cups rolled oats
  •  2 tbsp water

Preheat the oven to 350 F.
2 Process the butter, shortening and white sugar in a food processor. Sift together the flour and baking soda. Add this along with the rolled oats to the food processor and process. Add the water and pulse to combine.

3 Turn out onto a floured surface and roll to 3/8 inch thick. Cut out into rounds. Bake on ungreased cookie sheets 10-12 minutes.
