Cookie swap: Kathie's Christmas cookies

  • 4 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter at room temperature
  • 2 cups sugar
  • 2 large eggs
Sift dry ingredients and set aside. Beat butter and sugar until pale and fluffy.  Beat in eggs 1 at a time add vanilla. Gradually stir in dry ingredients and mix until incorporated.
2 Divide in half and refrigerate until firm, about an hour.
3 Preheat oven to 325 degrees
Roll out dough ¼ inch thick. I used 2 long wooden dowels that are 1/4 inch thick to make sure the cookies are the same thickness. I also roll between 2 sheets of waxed paper to make sure that I don’t over flour the dough.
5 Cut out desired shapes and place on parchment lined cookie sheets and bake until golden 15 to 18 min. Let cool on sheets on wire racks. Decorate with royal icing.
