1 Apple cake recipe
Ingredients
- ¼ cup granulated sugar
- 1 tbsp cinnamon
- 8 cups peeled, cored and chopped McIntosh apples
- 2-¾ cups cake and pastry flour, sifted
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup vegetable oil
- ½ cup apple sauce
- 2 cups granulated sugar
- ¼ cup orange juice
- 2 vanilla beans, seeds scraped out, or 2 tsp vanilla extract
- 4 eggs
Directions
1 Preheat the oven to 350°F. Grease and flour a 9" fluted cake pan; set aside. Stir together the sugar and cinnamon in a large bowl; add the apples and toss to coat. Set aside.
2 In another large bowl, sift together the flour, baking powder and salt. In a smaller bowl, whisk together the oil, apple sauce, sugar, orange juice and vanilla seeds.
3 Pour the wet baking ingredients over the dry and stir to combine (the mixture will be thick). Add the eggs, one at a time, stirring well after each addition. Pour half of the batter into the prepared cake pan. Spread half of the apple mixture over the top.
4 Cover with the remaining batter, then top with the remaining apple mixture. Bake for 1½ hours, or until a toothpick inserted in the centre of the cake comes out clean.
Makes 1 cake.
