- 7 cups water, divided
- 1 cup granulated sugar
- 3 tsp lime zest
- 1 cup fresh mint leaves
- 1 cup fresh lime juice
Directions
1 In a medium saucepan, combine 3 cups water with the sugar, lime zest and mint leaves. Set pan over medium-high heat and stir mixture occasionally to dissolve the sugar. Bring to a boil and simmer for 2 minutes. Remove from heat and cool syrup to room temperature.
2 Stir lime juice into syrup and then strain the mixture into a pitcher. Add remaining 4 cups water to pitcher and mix.
