Recipe: Chocolate chunk cookies

These chocolate chunk cookies are sure to please chocolate lovers big and small.

  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 oz coarsely chopped bittersweet chocolate
  • 3 oz coarsely chopped white chocolate

Directions

Preheat oven to 350°F. Cream butter in a large bowl with an electric mixer. Gradually beat in sugar until mixture is smooth. Add egg and vanilla and beat for another minute. Sift flour with baking soda and salt, and stir into cookie batter, followed by pecans, cherries and chocolate.

2 Drop heaping teaspoons of batter about 2 inches apart onto ungreased cookie sheets. Bake in the centre of preheated oven until cookies look golden around the edges, about 8 to 10 minutes. Cool for 5 minutes, then transfer cookies from baking sheets to baking racks. Let cookies cool completely and store in an airtight container for up to three days.
