Recipe: Shrimp skewers with herb sauce

This recipe is for sizzling on the raclette grill top. If you can’t get lemon balm, try substituting fresh mint.

32 frozen jumbo shrimp, raw and peeled
2 limes
4 tbsp soy sauce
7 tbsp oil
1 clove garlic
Cayenne pepper
1 bunch fresh chives
1 bunch fresh Italian parsley
1⁄2 bunch lemon balm
Salt and freshly ground pepper
16 wooden skewers

Prep time: 1 hour and 30 minutes
Cooking time: 8 minutes

1 Thaw shrimp. Rinse limes under hot water. Grate zest from both limes.

2 Squeeze juice from limes. In bowl, combine 6 tbsp of the lime juice, the lime zest, soy sauce and 4 tbsp of the oil. Peel garlic, squeeze through press and add to lime mixture. Season with cayenne.

3 Pat shrimp dry. Slit open backs with small knife and remove black veins. Thread 4 shrimp each onto eight sets of 2 parallel skewers (so shrimp won’t rotate when you turn skewers). Place skewers in shallow dish and pour marinade over top. Marinate for 1 hour, turning occasionally.

4 Rinse chives, parsley and lemon balm and shake dry. Finely chop chives, parsley and lemon balm. Combine 2 tbsp lime juice, and salt and pepper to taste. Stir in remaining 3 tbsp oil and fold in herbs.

5 Scrape as much marinade off skewers as possible and cook on preheated grill for 6 to 8 minutes, turning once. Serve skewers with herb sauce.
