Recipe: Strawberry coconut milk soup

You can still enjoy soup this summer with this cool strawberry coconut milk soup.


Ingredients
• 3 cups white grape juice
• 1/2 cup granulated sugar
• 1 lb fresh strawberries, hulled and sliced in half
• 1 piece of fresh ginger, 1x1 inch, peeled and sliced
• juice of 1 lemon
• 2 cups whipping cream plus extra for garnish
• 3/4 cup coconut milk
• 1 tbsp shredded toasted coconut


Directions
1 Heat grape juice with sugar in a saucepan over medium-high heat, until sugar is dissolved. Bring mixture to a boil and add strawberries and ginger. Simmer 1 to 2 minutes. Remove pan from heat and allow mixture to infuse for about 30 minutes.

2 After infusing, remove ginger slices and discard, then puree mixture in a food processor or blender until smooth. Pass mixture through a sieve, then add the lemon juice and cool mixture to room temperature.

3 Stir whipping cream and coconut milk into the cooled strawberry mixture. Cover and chill thoroughly.

Serving suggestions
To serve, spoon strawberry soup into bowls and swirl a little extra cream into each portion. Sprinkle with toasted coconut.
