• 12 oz fresh strawberries, hulled and sliced in half
• 1/3 cup granulated sugar
• 1 tbsp lime juice
• 4 oz white chocolate
• 1 tsp lime zest
• 1/3 cup yogurt
• 3/4 cup whipping cream
• extra strawberries and white chocolate for garnish
Directions
Heat strawberries, sugar and lime juice in a small saucepan over medium-high heat. Simmer until berries are soft, about 3 to 5 minutes. Remove from heat and bring to room temperature. Puree mixture in a food processor or blender until smooth and pass through a sieve into a mixing bowl. Place chocolate in a microwave-safe measuring cup and heat in microwave on high for 60 to 90 seconds, until melted. Stir chocolate and allow to cool slightly. Fold lime zest into yogurt and stir yogurt mixture into strawberry puree along with white chocolate. Lightly whip cream and fold into berry mixture until thickened. Fill four 6-oz stemmed glasses about three-quarters full with berry mixture and chill in the refrigerator for at least 2 hours. To serve, top each portion with sliced strawberries and finely grated white chocolate.
