Ingredients
- 2 tbsp unsalted butter, at room temperature
- 1/3 cup plus 1 tbsp sugar
- A few drops of pure vanilla extract
- 1 egg
- 1/2 cup soft, dried figs, chopped
- 1/3 cup chopped white chocolate (or use chips)
- 1 cup all-purpose flour
- 1-1/2 tsp baking powder
Directions
1 Preheat the oven to 325F.
2 Cream the butter and sugar in a mixing bowl until light and fluffy. Add the vanilla and egg and mix well. Stir in the figs and chopped chocolate. Mix the flour and baking powder together in a separate bowl, then gently fold into the wet ingredients.

4 Bake in the preheated oven for about 25 minutes, or until the cookies are pale gold. Remove from the oven and let cool for a few minutes. Store in an airtight container for up to one week.
Makes about 15 cookies.
