Skirt steak cooks up very nicely in the barbecue pit for these tasty fajitas. Just be sure to sharpen your knife and slice the meat thinly and always against the grain. This is a nice smoker version of Korean-style short ribs. The smoking gives them a great flavour, while the cooking in the pan helps to tenderize. Be sure to get cross-cut (flaken style) ribs to enhance the taste from the barbecue sauce marinade and for that great appearance. These great big burgers have all the good stuff on the inside. They’re stuffed with blue cheese and bacon and cooked in the smoker for an extra layer of flavour. Be sure to get them sealed up tight so the good stuff stays inside. They’re so big you might want to serve some of them whole and some cut in half.
