1 In electric mixer, cream butter with sugars until smooth. Add flours along with ground nuts, and spices. Mix until dough comes together. It might be a tad crumbly, but if you can make a ball with a small amount of dough then it is just right.
2 Press a tablespoon size ball of dough into a cookie forms. Lay cookie forms filled with dough, filled side up on cookie sheet in a single layer.
3 Bake for 30 minutes at 300 F. Once baked, let cook for a few minutes and tap cookies out of form onto cookie sheet. Serve sprinkled with sifted icing sugar.
Tip: If dough is too crumbly you can add an egg yolk.
- 1-1/3 cup unbleached white flour
- 1-1/3 cup cake and pastry flour
- 3/4 cup granulated white sugar
- 3/4 cup icing sugar
- 1-1/3 cup unsalted butter, at room temperature
- 1-1/2 cup finely ground hazelnuts {To grind: Use 1/2 cup of the flour along with 2 cups whole hazelnuts and put in blender, pulse until finely ground}
- 1/4 tsp cinnamon
- Pinch ground cloves
- 1/3 cup cocoa powder
