- 2/3 cup butter, softened
- 1/2 cup sugar
- 2 eggs, separate white from one
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking powder
- 1/3-1/2 cup apple butter
- 1 tsp cinnamon
1 Preheat oven to 375F.
2 Mix butter until creamy then add sugar. Continue to mix until well blended.
3 Add eggs (one whole, one yolk), and vanilla and mix well. Add flour, baking powder and cinnamon. When all flour is mixed in. Refrigerate dough for an hour or until workable.
4 Roll into 1 inch balls and place on cookie sheet. Gently press thumb into centre of each ball. Brush on egg white and bake for 10-12 mins.
One removed from oven, fill thumbprints with apple butter. (If holes puffed up just press again with a small measuring spoon or something similar in size)
5 Let cool on wire rack. Sprinkle with mix of cinnamon and sugar (optional).
Makes approx 3 dozen.
