An easy-to-make and delicately flavoured frangipane-style favourite.
Time is valuable during the holidays and, as such, we recognize the need for simple delicious desserts with great taste. This casual take on a patisserie staple is just that, with buttery almond filling and fresh pear complementing each other perfectly. So ditch that fruitcake recipe once and for all; this tempting sweet tart recipe is going to be your new holiday go-to.
- ⅓ cup unsalted butter, softened
- ½ cup brown sugar
- 2 eggs
- 1-⅓ cups almond meal
- ¼ cup all-purpose flour
- ¼ tsp baking powder
- Zest of 2 lemons
- 3 Gaucho pears, peeled, cored and halved
- Raw sugar for dusting
- Whipped cream for serving
1 Preheat the oven to 325°F. Lightly grease an 11" tart pan.
2 Add the butter and sugar to the bowl of a food processor; beat until just combined.
3 Add the eggs, almond meal, flour, baking powder and lemon zest and process until all the ingredients are just incorporated. Spoon the mixture into the prepared tart pan.
4 Arrange the pears, skin side down, on top of the tart mixture and bake for 35 to 40 minutes, or until a toothpick inserted in the centre of the tart comes out clean.
5 Sprinkle the tart with the raw sugar and allow to cool in the pan. Serve with whipped cream.
Prep time: 10 minutes.
