Recipe: Beet and goat cheese sandwiches

These small gourmet sandwiches pack a flavourful punch that guests won't be able to resist.

Ingredients

  • 4 oz soft goat’s cheese
  • 1 tbsp lemon zest
  • ½ tsp freshly ground black pepper
  • 1 tbsp chopped fresh chives
  • 1 tbsp fresh basil
  • 12 mini ciabatta buns
  • ½ cup sliced pickled beets
  • ½ cup mini fresh basil leaves


Directions

1 Place the goat’s cheese, lemon zest, pepper and herbs in the bowl of a food processor and pulse for about 1 minute, or until the mixture is smooth and the herbs are finely chopped.

2 Slice the ciabatta buns open with a large serrated knife.

3 Spread each bun with some of the lemon-herb goat’s cheese, top with 3 pickled beet slices and then with the mini basil leaves.

Prep and cook time: 30 minutes.
Makes 12 sandwiches.
