Ingredients
  • 4 eggs, separated
  • 1 cup packed brown sugar
  • Zest and juice of 1 unwaxed orange
  • 1-1/3 cups ground walnuts
  • 1 tsp ground cinnamon
  • 1 -1/2 cups grated carrot
  • 3/4 cup whole-wheat flour
  • 1 tsp baking powder

Frosting
  • 8 oz. cream cheese
  • 2/3 cup confectioners' sugar
  • Zest and juice of 1 unwaxed orange

Directions
1 Preheat oven to 350°F. Whisk egg yolks and sugar in a bowl until thick and creamy. Fold in remaining cake ingredients, except egg whites, blending until smooth.

Whisk egg whites until stiff, then fold into the cake mixture. Pour into the prepared cake pan and bake in centre of preheated oven for 1 hour. Let cool in pan for 5 minutes, then turn out and cool completely on a wire rack.

3 To make frosting, beat cream cheese and confectioners' sugar together. Add orange zest and enough juice to flavour. Spread over the top of the cake using a spatula dipped in hot water. Sprinkle with any remaining orange zest before serving.

Makes one 8" square cake.
