A simple and healthy chicken and veggie wrap that's perfect for a summer picnic.
- 4 tortilla shells
- Cream cheese
- 1 roasted chicken breast, sliced
- 1 red or orange pepper, cored and sliced
- 1 avocado, peeled, stoned and sliced
- 6 radishes, sliced
- 1 mango, peeled, stoned and sliced
- Sprouts or chopped lettuce
- 1 cup cooked quinoa, any kind
1 Lay your tortilla shell down and spread some cream cheese over one half.
2 Place some of the chicken in the centre and then start piling the toppings on.
3 Sprinkle on some quinoa at the end; roll up and enjoy.
Note: I like to keep a batch of cooked quinoa in the fridge for sprinkling on various meals. It’s a great addition to soup recipes, wraps, salads, or even mixed with cottage cheese and fruit.
