Recipe: Ginger spice cookies

  • 2/3 cup unsalted butter
  • 3/4 cup brown sugar
  • 1 egg yolk
  • 2 tbsp blackstrap molasses
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cardamom
  • 1 tbsp ground espresso
  • 1/4 cup candied ginger, finely chopped
  • Coarse sugar for topping

Directions
1 In a food processor, cream together the butter and sugar until smooth. Add the egg yolk and molasses and mix well. In a small bowl, stir together the dry ingredients. Add the dry ingredients and the candied ginger to the butter mixture and process until just combined. The dough will be very soft, so refrigerate it for 30 minutes to make it easier to work with.

2 Roll the chilled dough into a 12" log and wrap in parchment paper. Freeze for several hours until dough is firm. Unwrap the dough and slice into 1/4" rounds. Pour some coarse sugar into a small bowl and press the top of each cookie into the sugar. Place cookies, sugar side up, 2" apart on a parchment paper-lined baking sheet.

3 Bake in a 350°F oven for 15 minutes, until set. Leave the cookies on the baking sheet to cool. Cookies will crisp up as they cool. Make sandwiches by pressing scoops of ice cream between two cookies. Great with caramel, coconut or vanilla ice cream.

Makes 24 cookies.
