Cookie swap: Debora's double chocolate nut biscotti
- 3 sq. semi-sweet chocolate
- ½ cup butter or margerine, softened
- 1-½ cups granulated sugar
- 2-¾ cups all purpose flour
- 2-½ tsp. baking powder
- 1 tsp. salt
- ¼ cup orange juice
- ½ cup semi-sweet chocolate chips
- 2 eggs
- ¾ cup almonds, coarsely chopped
- ¾ cup chopped walnuts
- 1 tbl orange rind
1 Partially melt 3 squares of chocolate in microwave (approx. 2 mins. on medium). Beat together butter, sugar, and eggs. Beat in melted chocolate and remaining ingredients except for chocolate chips and nuts.
2 Add chocolate chips and nuts and stir batter by hand. Divide dough in half and form into a long log and place on a greased baking sheet. Repeat with second half of dough.
3 Bake at 350F for 30 mins. Cool 10 mins. Remove from pan and with a sharp knife cut into ¾” slices.
4 Return cookies to cookie sheet, cut side down. Bake 20 mins. longer turning cookies over once. Cool.
