Recipe: Beet and goat cheese sandwiches
- 4 oz soft goat’s cheese
- 1 tbsp lemon zest
- ½ tsp freshly ground black pepper
- 1 tbsp chopped fresh chives
- 1 tbsp fresh basil
- 12 mini ciabatta buns
- ½ cup sliced pickled beets
- ½ cup mini fresh basil leaves
1 Place the goat’s cheese, lemon zest, pepper and herbs in the bowl of a food processor and pulse for about 1 minute, or until the mixture is smooth and the herbs are finely chopped.
2 Slice the ciabatta buns open with a large serrated knife.
3 Spread each bun with some of the lemon-herb goat’s cheese, top with 3 pickled beet slices and then with the mini basil leaves.
Prep and cook time: 30 minutes.
Makes 12 sandwiches.
